How to prepare
Sift 1–2 grams of matcha into a bowl. Add 60–80 ml of hot water at around 70–80°C. Whisk briskly in an “M” or zig-zag motion until a creamy, vibrant froth forms. Adjust intensity by using more or less powder. Excellent for traditional usucha, premium lattes, iced matcha and shaken cold drinks.

This ceremonial grade matcha is crafted in Shizuoka, one of Japan’s most respected tea growing regions. It is produced from the Okumidori cultivar and is known for its deep jade green colour, smooth natural sweetness and rich umami. The leaves are shaded before harvest, picked during the spring first flush and stone milled with great care into an exceptionally fine powder.

Shizuoka, Japan
Shizuoka is one of Japan’s most historic and respected tea regions and it stretches from coastal plains to misty mountain valleys that create ideal conditions for cultivating exceptional matcha. The soils are naturally rich in minerals and the climate is shaped by cool ocean breezes that help the young leaves develop depth and clarity. Shizuoka is also known for its traditional Chagusaba tea-grass farming culture which supports biodiversity and enhances flavour quality. Generations of artisans here have refined shading, steaming and milling techniques, resulting in matcha that is clean, sweet, umami rich and elegantly fresh. This unique environment and craftsmanship give Shizuoka matcha its signature refinement and vivid colour.

Okumidori おくみどり
Okumidori is a Japanese tea cultivar originally developed in Shizuoka as a cross between Yabukita and a local native variety. It is a late-budding cultivar, sprouting about a week after Yabukita, which naturally protects it from early spring frost. Known for its smooth and well-rounded taste, Okumidori produces a vibrant green liquor with low astringency, gentle bitterness and a refreshing aroma. Although first created for sencha, it has become highly valued for matcha because it yields a mellow, balanced flavour and a bright, appealing colour when stone-milled into powder. As a result, Okumidori matcha is appreciated for its stability, elegance and easy everyday drinkability.
